summer salad & vinaigrette

paired with prime NY strips & sliced heirloom tomatoes

Ingredients

1 can of chickpeas

1 package of multicolored flavor bomb tomatoes

4 persian cucumbers

1 and a half mixed bell peppers

1/2 red onion

feta cheese measured with your <3

Vinaigrette

1/3 cup olive oil

1/3 cup balsamic vinegar

1 tbsp dijon mustard

1 tbsp honey

pinch of salt

fresh ground black pepper

Instructions

1. dice cucumbers, onion, & bell peppers

2. cut tomatoes in half

3. combine all ingredients in a bowl

4. whisk all vinaigrette ingredients in bowl and pour over salad
