tiny’s kale salad dupe

Ingredients
1 large bag of baby kale
1 honey crisp apple
3 – 4 large carrots
1 cup shredded gouda cheese
1 cup pine nuts roasted
Maple Vinaigrette
1/4 cup olive oil
1 tsp dijon mustard
2 tbsp champagne vinegar
1 tsp maple syrup
Instructions
1. wash kale thoroughly
2. roast pine nuts in a pan under golden brown
3. dice apple, ribbon carrots with peeler, hand shred gouda cheese
4. whisk together vinaigrette ingredients
4. combine all items in a bowl and serve alongside chicken meatballs
